How Do I Choose a Good Mushroom at the Store?
Always look for mushrooms that are:
- hard
- have a tight veil (a thin tissue that covers the cap).
- are uniform in colour
- have a slightly shiny surface
- heavier (the heavier the better as they will last longer).
How Do I Store Mushrooms Once I Get Them Home?
- Store Mushrooms In the Fridge
Mushrooms are very temperature sensitive, please put in the fridge as soon as possible - Use a Paper (or Porous) Bag
Always use a paper bag (or porous bag) as mushrooms like the dark and they won't sweat in a paper bag. Never use plastic, it will reduce the shelf life and cause the mushroom to sweat. - Don't freeze fresh mushrooms. Sautée them first!

Should I Wash The Mushrooms?
Yes, even though mushrooms are grown in barns under controlled environment, we encourage you to either brush off debris with a damp paper towel or rinse quickly in cold water and pat dry.
Please note: Do not soak mushrooms in water as they will easily absorb the moisture.
If the stems are tough, trim them before using them in your dish (in most cases shiitake stems should be removed before being utilized).

Can I Microwave Mushrooms?
Yes, whole button or thickly-sliced mushrooms can be microwaved. Put seven to eight ounces (200g to 227g) in a microwavable bowl; cover and cook on HIGH for 2 to 3 minutes, stirring once. There is no need to add butter or oil.
